In the late '80s, it's in Val Moret, in the peace and quiet of the Aube country, that Thérèse Marisy came up with the idea of building a hotel and restaurant adjacent to the family farm. She wanted this place to become a rallying point for tourists wishing to discover the Champagne and Burgundy regions. She was convinced that the beauty of the site would make a difference and that the magic of this land would work.
A little history
Near Troyes situated between Reims, Dijon, Strasbourg and Paris, at the junction between the North, South, East and West motorways, Le Val Moret is the perfect stopover for British, Dutch, Belgian travelers and other "Northerners" (but not only) on the road to their sunny holiday destinations. It is also the ideal place for any businessman on a trip in the North-East of France between Lyon and Lille to find a pleasant and comfortable retreat before the next business meeting.
Thérèse Marisy was right. She quickly involved the whole family in building her dream and the project was realized by 1991. Since then Le Val Moret, which luxurious outline emerges from the pasture land, has become a unmissable reference on the local hotel and restaurant scene thanks to the quality and the range of its services, but also thanks to its excellent hearty and tasty cuisine which perfectly reflects the long history of the country.

The Aqua Val opened in April 2012 (equipped with a heated indoor pool, sauna and jacuzzi)
And the Camélias opened in June 2012 : seven new rooms in the village, about 500 yards from the hotel.
Renovation of 12 rooms in 2016 , with air conditioning, double bed 160*200,
rooms with balcony equipped with a large bed of 180*200, sofa, safe, etc....
June 2019 : spa opened with treatment rooms, hammam, fitness room
