It was here at the Val Moret, in the heart of the Aubois countryside which exudes peace and serenity, that Thérèse Marisy had the idea in the late 80s of building a hotel restaurant close to the family farm. She imagined it becoming a rallying point for tourists who would be drawn by both the Champagne and the Burgundy regions. She believed that the nature of the surroundings would make the difference, and the charm of this countryside would work its magic…

Located between Rheims and Dijon, Strasbourg and Paris, where the motorways linking North and South, East and West cross, to her mind the Val Moret would represent a stopover point of choice for the English, Dutch, Belgians and other "Northerners" (although not exclusively), at this halfway point on the holiday route to the sun. But also for all those business people who, travelling to and fro across the North-East quarter of France from Lyon to Lille, would be seeking a pleasant and comfortable refuge between business meetings.

Thérèse Marisy's vision proved to be well-founded. She lost no time in mobilising her whole family behind her dream, a project which was to be transformed into reality as early as 1991. Since then, Le Val Moret, whose opulent silhouette rises from the midst of the pastures, has made its mark as an undeniable reference on the regional hotel and restaurant landscape, thanks not only to the quality of the service and the hospitality it offers but also to the excellence of the ample and delicious cuisine, an exact reflection of the long tradition of the land..


People come from near and far to enjoy the cuisine and to recharge their batteries.
People come here with lovers, friends, family… or with colleagues for a seminar or business meal. They come because they are at ease here, sure of a warm and friendly welcome,
